What this is
This is a personal blog about a single evening at Alchemist, the two-MICHELIN-star restaurant on Refshaleøen in Copenhagen, and about the idea of holistic cuisine behind it. It is a first-person account plus the practical background I had to assemble myself before going.
It is not a magazine, not a booking service and not a review aggregator. It is one diner writing down what she made of a restaurant, and trying to be useful to the next person considering the same trip.
Who I am
My name is Katherine Fosdick. I live in Depew, New York and I write this blog in my own name, on my own time. I do not work in the restaurant industry, I have no professional relationship with anyone I write about, and there is no company behind this — just me and a hosting bill.

I paid for my own dinner
I visited Alchemist in May 2026. I booked through Alchemist's own system like everybody else, waited for a release window, and paid the full published price including the deposit and its non-refundable service fee. Nobody at the restaurant knew I would write anything. I received no discount, no invitation, no press seat, no complimentary courses and no gift of any kind, before or since.
If that ever changes — if I am invited somewhere, or given something — it will be stated at the top of the page concerned, in plain language, before you read a word of the opinion. That is the rule I hold myself to and it is also what the FTC requires of anyone endorsing anything in the United States.
How the site is funded
Advertising pays for hosting and the domain. Advertising is visually distinct from what I write, is never placed inside an article in a way that could be mistaken for it, and has never influenced a sentence on this site.
No restaurant, chef, booking platform or travel company has paid me, sponsored a page, or been given sight of anything before publication. If any page ever carries a paid or affiliate link, it will be labelled at the top of that page. At the time of writing, none do.
Advertising uses cookies and similar technologies. What that means for you, and how to refuse it, is in the cookie policy and the privacy policy. You can change your choice at any time from the footer.
What I will never do
- Sell, resell, broker, hold or offer priority access to reservations. I have none and could not get you one.
- Claim availability I cannot verify, or imply I can influence any restaurant's booking system.
- Present this blog as Alchemist's site, or let it be mistaken for one. See the independence notice.
- Accept payment in exchange for a favourable opinion, or publish an endorsement without disclosing what it cost me or what I was given.
